FoodVault is stoked to welcome SIP Distilling Co, an Auckland craft distillery creating small-batch New Zealand spirits with plenty of creativity, flavour and personality.

Based in Takapuna on Auckland's North Shore, SIP produces gin, vodka, rum and cocktails, combining traditional distilling techniques with a modern approach to flavour.

From a garage project to a modern Auckland distillery

SIP started with a simple idea: good gin with good people.

Founder and main distiller Caci Erasmus spent years experimenting with recipes, botanicals and distilling techniques before turning the passion project into a full-scale distillery. In 2022, SIP acquired its first 100-litre copper column still, marking a major step into professional production.

Today, the distillery continues to produce its spirits in small batches in Takapuna.

Gin that's made to stand out

SIP's gin range includes everything from its award-winning Chivalry Premium Dry Gin to its colourful Shimmer Gin collection.

The Shimmer range is particularly distinctive, using edible shimmer that creates a swirling visual effect when the gin is poured or mixed. Flavours include Raspberry & Musk, Lavender & Rosemary, and Strawberry & Coconut, with limited-edition releases adding even more variety.

It's the sort of gin that's designed to taste good — but also look pretty bloody impressive in the glass.

More than just gin

SIP has expanded beyond its original gin focus, with vodka, rum, premixed cocktails, gift sets and cocktail bundles now part of the range.

That makes SIP a useful one-stop shop whether you're looking for a bottle for yourself, something different for a celebration, or a gift for the gin lover in your life.

Experience distilling for yourself

One of the things that really sets SIP apart is that the distillery isn't just somewhere spirits are produced.

Visitors can get involved through gin-making workshops, tastings, tours and private events in Takapuna.

The gin-making workshops allow participants to explore botanicals and flavour, create their own recipe, distil it and bottle their own personalised gin.

It's a pretty cool way to get behind the bottle and see what actually goes into making a spirit.
