Creamy Garlic Chicken Pasta

Ingredients

300g fettuccine or spaghetti

2 chicken breasts, sliced

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cooking cream

¾ cup grated parmesan cheese

1 teaspoon Italian herbs

Salt and pepper to taste

Fresh parsley, chopped

Optional: baby spinach or mushrooms

Instructions

Bring a large pot of salted water to the boil and cook the pasta until al dente. Reserve half a cup of pasta water before draining.

Season the chicken with salt, pepper, and Italian herbs.

Heat olive oil in a large frying pan over medium-high heat. Cook the chicken until golden and fully cooked. Remove and set aside.

Reduce the heat to medium and sauté the garlic for about one minute until fragrant.

Pour in the cream and stir well. Add the parmesan cheese and continue stirring until smooth.

Return the cooked chicken to the pan and mix through the sauce.

Add the cooked pasta, tossing until evenly coated. If needed, add a splash of reserved pasta water to loosen the sauce.

Finish with chopped parsley and extra parmesan before serving.

Tips

Swap chicken for prawns or mushrooms for a different variation.

Add spinach during the final minute of cooking for extra greens.

Freshly grated parmesan melts much better than pre-shredded cheese.

Storage

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently with a splash of milk or cream to restore the sauce.
